One of the largest tree fruit in the world, one of the most favorite fruit keralites, a tropical fruit this much of descriptions are more than enough to describe jackfruit. Jackfruit is one most popular fruit in India, especially in Kerala. In Kerala it is really hard to find a place without a jackfruit tree.  From ages back itself we have been making the best use of this tree and its fruit. If we dig into the Kerala cuisine we can see a lot dishes made out of this fruit, both as main course and desserts like jackfruit chips (chakka chips), jackfruit jam (chakka varattiyath), different curries. The fruit is used for cooking in both raw and ripe stage.

Jackfruit is a fruit which has lot health benefits and researchers are still researching on its unfound benefits. Same like this; it is filled with business opportunities. The primary economic source is the fruit itself. As it is a seasonal fruit, it has more demand during its harvesting period. Due to its highly perishable nature the ripe fruit can’t be stored for long as it is, so from early time itself people process it and preserve so as to use it throughout the year. Chakka chips are one of the most popular things made out of this fruit. Many small house hold business are making a good profit out of this chakka chips. The preparation of the chips is also very easy, you just need raw jackfruit. Cut the fruit; take the bulb part out of it and deseed it. Then mix the bulb part with some for taste and preservation and deep fry it in coconut oil or any other refined oil.

In case of Kerala, the government is also initiating different tourism programs related to jackfruit. This tropical fruit is playing huge role in tourism as the variety products made out of it grab the tourist’s attention. The entrepreneurs can start small scale units to produce good quality jackfruit products like chips, jam, pickles, seed flour, ice cream etc. Different government research centers are working on to standardize the production protocol of jackfruit products.
